Ingredients
- 2 tablespoons olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup Arborio rice
- 1 jar Pure Harvest Cherry Tomato Passata
- 4 cups vegetable or chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnishing

- Sauté: In a pan, heat olive oil, add chopped onion, and cook until soft. Stir in minced garlic for 1 minute.
- Add Rice: Stir in Arborio rice and sauté for 2-3 minutes.
- Incorporate Passata: Mix in 1 jar of Cherry Tomato Passata and gradually add warm broth, one ladle at a time, stirring frequently until absorbed (about 18-20 minutes).
- Finish: Remove from heat, stir in Parmesan cheese and season with salt and pepper.
- Serve: Garnish with fresh basil.
